Skinny Banana Chocolate Chip Muffins

Makes one dozen:

Ingredients:

-1 1/2 cup whole wheat pastry flour or white whole wheat flour

-1 teaspoon baking soda

-1/4 teaspoon salt

-3 whole bananas

-1/4 cup honey

-1 tablespoon vanilla

-1 tablespoon coconut oil

-1 egg

1/2 cup nonfat plain Greek yogurt

1 tablespoon almond milk

-1/2 cup chocolate chips

What to do:

  1. Preheat oven to 350 degrees F

  2. Spray 12 cup muffin tin with nonstick spray

  3. In a medium bowl whisk together flour, baking soda, and salt

  4. In a separate bowl blend together bananas, honey, vanilla, oil, egg, yogurt, and milk

  5. Add dry ingredients to wet ingredients and mix until fully combined and smooth

  6. Gently fold in chocolate chips

  7. Bake 20-25 minutes or until toothpick comes out clean or with just a few crumbs on it

  8. Cool in tin 5-7 minutes

  9. Remove from tin and let cool another 5 minutes or so

  10. Best served warm!
